I like responsive tools. I like control. I like controls that work a lot like my body works[1], controls that let me affect more than one aspect of what I'm doing with the same touch.
Words to be quoted on the opening page of every ergonomy textbook.
That said, I think the not-quite-standardizable aspect of the touch-sensitive keyboard you describe would make it even harder to realize.
I wonder if the pie menu you mention was anything like the menus on the game Planescape: Torment? (They did look like a little pie on the corner of the screen you'd drag it to.) That had taken some getting used to, but felt natural in a short enough time.
