So would someone who engages in espionage then be an "espionager" instead of a "spy"? Or an "espionagist"? Or an "espionagier"?

Espionagent (inevitably shortened to "agent", of course).

... But an espionagrapher would be somebody who write spy novels ... or perhaps someone who wrote training manuals for spies, or took notes and delivered reports from spies, or ... We can make that suffix work one way or another.
