My options in middle school were Spanish, French, and Latin; my older sister had taken Spanish and/so I wasn't interested; I had no interest in taking a dead language, and thoroughly enjoyed my five years of French. (I've intended to pick it up again for the successive 13 years, but have instead just maintained basic proficiency.)
Side note: Sometime after I left middle school, they dropped French due to waning interest vs. Spanish.
In high school, the options included the above three, German, Japanese, Russian, possibly Chinese, and surely several others I've forgotten about.
In college--hell, I'm not sure there were many languages that *weren't* available. I took a short course in Scottish Gaelic; I would've preferred Irish, but the one professor who knew and taught the six Celtic languages received more interest in Scots. :)
