In specific: who says that? People who hate joy and music and delight!
In general: goodness, people are judgmental. I mean, I'm judging judgy people in my comment, but from what I've seen judgy people cause a lot more harm and pain than do people whose hobby is collecting and loving on guitars, or building things out of Lego, or other harmless fun activities that get judged harshly and needlessly.
Woodwindists who just had to move all their SOs guitars out of the way when their SO trips and breaks their arms and the profusion of guitars about their apartment are a tripping hazzard.
I mostly hear it when folks come into my house and see the stack of more guitar cases than they expected to see. (But I don't yet have a seven-string, a Les Paul style, a fretless, or one with a scalloped fingerboard like a Deutschlaute, so no, I don't have enough yet.)

Or, uh, so I've heard. *whistles innocently*

... okay, I can see that theoretical woodwindist's point.
Maybe what we need are not fewer guitars but more shelving!
