There is a book called CookWise that explains a lot of the "why" of cooking and the science behind it. You would probably find it interesting.
Oh, and the soup sounds yummy! Any idea how well it adapts to a regular pot? (My crock pot is meat, not dairy.)

(When I talked about not knowing how I know to do something, I was thinking more aesthetic decisions than technical, though of course there's a lot of overlap.)
My best guess is that this soup should work just fine in a regular pot, though maybe it'll need to be stirred more often? I wasn't really using the aspects of the crock-pot that make it special this time, though the several days that version 0.1 took made it a good thing I was using a crock-pot then.
