Hint: fill one side of the sink with soapy water, scrape/rinse dishes, and put them into the soapy water. (A basin helps if your sink doesn't hold water.)
This has two advantages:
They don't get gross
You can tell yourself that you're presoaking the dishes, not ignoring them.
Don't do this with wooden utensils for long, though.
Not sure what the mice would make of that, but a plastic basin of soaking dishes shouldn't be hard to make mouse-resistant.
