Good luck in fighting this. My guess is that if you actually show up to the hearing it'll probably be dismissed. (I am generalizing from my single disputed parking ticket, which might not be valid.)
I stopped using (outdoor) trash cans because I got sick of getting other people's trash in them. Now I just put bags out on the curb.
Actually delay is a good tactic. Ask for a hearing and postpone 2 or 3 times. There is large turnover in ticketer workforce and there is a good possibility that your ticketer will have left by the time you go to court. I had an unfair ticket dropped that way.
