Don't feed her in the morning if you know you will be traveling with her within about 6 or 8 hours. She wont starve despite what she tells you. She can/should have water before/during travel, but a cat can go a few days before lack of food will have any real adverse effects. When you get to your destination offer her dry food. She may refuse out of anger and/or tummy upset, but she'll get over it.
Another thing you can do is try to set the carrier up high enough in the car that she can look out the windows. And aim a vent (cool air, not hot) into the carrier.
