Actually all orthodox Jews (not just the ultra ones) say it, and they do include "...for not making me a slave." traditional, but non- Orthodox Jews reformulate the blessings into a positive format (for having made me a Jew; for having made me free..). I actually did some research on the origin of this set of prayers, that's how I came across the whole Greek origin of this - it's a completely fascinating history.
