I was hoping the footnote would get in to a discussion of Ethiopian food made by either Ethiopians, or alternately by Eritreans, and of Eritrean food sold as Ethiopian food, as that's what Americans know of.

I don't know much about it, but I gather expecting one of the 4 and getting a different one will be at least mildly disconcerting.

Er ... whoops. Possibly the latter based solely on my experience of Ethiopian food being entirely in restaurants in the US. The vegetarian dishes, at least, resemble what's served at The Red Sea and The Blue Nile in Adams Morgan, Dukem in Baltimore, The Red Sea in Portland Oregon, and an Ethiopian restaurant I've forgotten the name of in what looks like a converted house in Silver Spring. So: what I've always gotten when I thought I was getting Ethiopian food. Guess I need to do some research.
