I am debating whether to drop anything that has over 500 users cuz anyone adding that interest won't be added to the list and its more fun to be part of more rarified interests.
That is true but that only applies to when people are searching by "Interest". If I look at one person's info page in particular I like to see what I have in common with them. Whether or not strangers can find my name on the Interests list isn't my problem, and I don't talk about most of my "interests" enough that my page might be of interest to them for that.
