>offered me prickly pear cactus, which I'd never had before
Have you ever had _Opuntia_, which is: a) Not too uncommonly available in the grocery stores down my way, and b) Possibly the genus to which prickly pear belongs? I'd have to look it up.
I've personally never had the cactus, but Laurel (my iguana) seems to like it.
Until today the only cactus I'd eaten (that I've known about) had been the green stuff that comes sliced in short strips in jars slightly too large for someone who lives alone, in the Hispanic section of the grocery store. (I've found that most useful as a pizza topping.)
Groovy, I will have to try making cactus and strawberry pizza now. Also now that the idea is on the table, cactus ice cream seems to be a natural to keep BaitCon on the bleeding edge of ice cream recipe development. ^_^
Ah, yes, looking it up proved to be easier than I thought. Gotta love the web (and good search engines,a nd someone who can guess which search terms are good ones on the first try).

confirms that prickly pear does indeed belong to the genus _Opuntia_. Fair amount of other information of prickly pear, as well.
