Y'know, I find it downright disturbing, how easy it is to inadvertently synthesize tuna-like flavours from vegetarian ingredients.

(Well, more tuna-salad-like than straight-tuna-like, but the tunaness is in there. And it's not the first time I've accidentally done this.)

There are some vegetable combinations that do that (marinated things especially). My cat will come begging when I eat babaganoush, and I think it's the faux fishiness.

I'm not quite sure yet which combination(s) are doing it, since I don't take notes as I probably ought to while cooking, and I've only anaged this trick by accident. When I figure out how to do it, I'll know how to avoid it (and at that time I'll also pass the info to folks who might want to do it on purpose).

As [livejournal.com profile] tigerbright and [livejournal.com profile] dsrtao have mentioned here, it's easy to get partway there with hummus-based or hummus-like things, but there were no chickpeas in yesterday's example. (And although I do notice that aspect of hummus and baba ganoush, it's not as disconcerting there -- I think it's either less intense, or a different subset of tunosity than this curious interaction of spices and onions I'm running into.)

chickpeas, onion, celery, mayo, pepper; a little mashing of the chickpeas and it's basically tuna salad.
