Are green peppercorns naturally much hotter than black peppercorns, or is it just that my green peppercorns are that much fresher than my black ones?

Pink peppercorns are sweet. I like them. The hotness comes well after the sweetness.

it depends on where the peppercorns came from and how mature they were, but generally yes they are hotter than black and slightly less hot than white (at least the white varieties from India that I have sampled).

Most of the white pepper I've tasted has been pre-ground, in dust-covered tins that have sat in the back of someone's pantry for God knows how long and lost a lot of its flavour. I'm going to have to go find a reasonably fresh sample to compare.

Well, most of my friends were sweet when they were young, and became hot when they
hit their teens. So yes, the hotness comes well after the sweetness.

I'm pretty sure the woman who sold them to me explained that -- I get a fuzzy memory of the conversation every time I look at them. But the second-wave flavour is "peppery", and they're yummy, and apparently they're still called "pink peppercorns" despite not really being pepper and I don't know what else to call them. When I wrote that I was tempted to include an asterisk and a footnote that said, "which aren't truly peppercorns", but since the aforementioned memory was, as mentioned, fuzzy, I wasn't certain I was remembering correctly which spice that conversation had been about. So I didn't. Now I am (thank you), but your comment will do the job of the hypothetical footnote. Whee.

Oh, I'm in an odd mood this morafternoon.

Anyhow, a) you're right, and b) they're still yummy. And cute. Kyute. Had to get them out of the translucent paper bag and into a glass jar, so they can catch the corner of my eye when I'm in the kitchen and make me smile. And remind me to use them. And tempt me to just nibble on a few right out of the jar.
